One of the most iconic cuts of the Argentine asado. The medialuna de vacío is a beef cut known for its crescent shape, tenderness, and intense flavor. It is a lean and relatively flat cut, ideal for grilling or roasting, taken from the rear side of the animal between the ribs and hip cavities.

It is a lean cut, with loosely packed muscle fibers, giving it great tenderness. It has a more intense meat flavor than other cuts. Often covered by skin or membrane, in this case we bring it to you fully trimmed and clean.
